In Gallup, New Mexico we have a handful of New Mexican restaurants that are popular with locals and visitors. One of those is Jerry’s Café and it is not uncommon for the restaurant to have a line out the door. Everybody inside is having to decide whether to order their dish with green or red chile. It is a dilemma in New Mexico, like a food and wine pairing in other cities. Turquoise is another favorite of the locals and tourists must decide whether they want blue or green.
